To celebrate Valentine’s Day, Dorado Beach, a Ritz-Carlton Reserve hosted an enchanting cocktail reception at Spa Botánico in collaboration with La Factoria, internationally recognized as a World’s 50 Best Bars honoree. Set beneath the stars and surrounded by lush gardens, the evening blended romance and artistry with expertly crafted cocktails inspired by passion and place. Guests enjoyed live music, refined culinary touches, and an atmosphere designed to awaken the senses. The celebration was a beautiful expression of collaboration, where mixology, music, and the serene setting of Spa Botánico came together for an unforgettable Valentine’s experience.

CAFE LA TROVA EVENT:

An electrifying evening of rhythm and flavor took over COA Lounge & Bar as we hosted Rumba & Rhythm in collaboration with Cafe La Trova. Recognized among Miami’s finest, their renowned cantineros brought the spirit of Cuban cocktail culture to Dorado Beach, infusing the night with vibrant energy and masterful mixology. Guests were immersed in the unmistakable pulse of salsa and Latin beats, paired with handcrafted cocktails and elevated culinary offerings. The atmosphere was lively, magnetic, and unforgettable celebration of music, movement, and culture that transformed COA into a spirited Havana-inspired escape for one extraordinary night.

FAUNA X COA:

An extraordinary culinary exchange unfolded at COA Restaurant as we welcomed Fauna, a World’s 50 Best Latin America honoree, for an exclusive dinner collaboration. Led by acclaimed Chef David Castro Hussong, Fauna is celebrated for its ever-evolving tasting menus inspired by the bounty of Baja California’s Valle de Guadalupe, where seasonality and spontaneity guide each creation. For one unforgettable evening, COA became a stage for boundarypushing flavors, thoughtful technique, and immersive storytelling. The result was a refined yet adventurous dining experience that honored regional ingredients, culinary artistry, and the shared passion for innovation that defines both destinations.

ML HAARLEM:

An exceptional Michelin-starred collaboration unfolded at COA Restaurant as we welcomed Guest Chef Mark Gratama from ML Haarlem for an exclusive culinary experience. Located in the historic city of Haarlem, ML is celebrated for its refined, ingredient-driven cuisine that honors Dutch terroir with modern elegance. Set within a former print house, the restaurant pairs contemporary technique with seasonal precision, earning its Michelin star for creativity and consistency. For one extraordinary evening, Chef Gratama brought ML’s signature sophistication to COA, curating a thoughtfully composed menu that blended European finesse with Caribbean vibrancy, a seamless meeting of cultures, craftsmanship, and culinary excellence.

A CONNECTION TO THE LAND & CULTURE

Our chef sources the best seasonal products and serves them in our interpretation of a grill concept.

COA Bar highlights our custom-made “Mi Brasa” wood-burning oven.

The restaurant also features “La Cava,” with over 650 prestigious wine labels, making it one of the largest wine lists in the Caribbean.

COA Bar features a carefully curated selection of rums and other high-end spirits that highlight local flavors. We also have an innovative tapas menu.

The name “COA” comes from the language of the Taino, Puerto Rico’s indigenous Caribbean people. A “coa” is a wooden tool fashioned for harvest that enabled the development of agriculture on the island. With its connection to the harvest, COA uses local ingredients in the most traditional farm-to-table way.

For Puerto Rico’s indigenous Taino people, the coa was the tool that allowed them to harvest the land.

In reverence to this history, ingredients at COA are sourced seasonally and from local farms and purveyors, and signature dishes carry the flavor of Mi Brasa, a traditional, Spanish wood-burning oven.

This market-style café and boutique features Puerto Rican coffee, homemade gelato, fresh pastries and light snacks.

It’s also home to the Culinary Center, where the resort chefs offer the secrets behind dishes from their home countries.

CULINARY CENTER

A longing for a home-cooked meal or the desire to experience something new is at the heart of La Cocina Gourmet’s Culinary Center.

Hosted within a beautiful, residential-inspired kitchen, the center offers wine dinners and cooking classes showcasing seasonal ingredients and international cuisines. Led by our culinary experts, hands-on classes teach professional techniques and creative recipes for all skill levels, and five-course wine dinners feature course-by-course pairings. The Culinary Center also hosts themed journey's including a market featuring fresh produce flown in from Miami. Classes and wine dinners are intimate gatherings for no more than 10 guests and should be reserved in advance or upon arrival.

Chef Raul Tronco brings more than two decades of global culinary excellence to Dorado Beach, a Ritz-Carlton Reserve, where his work reflects the resort’s commitment to refinement, authenticity, and unforgettable guest experiences. With over 21 years of international experience across MICHELIN-starred restaurants and world-renowned luxury hotels, Chef Raul is recognized for his rare ability to unite creativity, operational precision, and sustainability at the highest level of hospitality.

Trained in Spain at the prestigious Escuela de Hostelería de Madrid and HACCP-certified, Chef Raul built his career mastering the foundations of classical technique before evolving into a culinary leader known for innovation and strategic vision. His professional journey spans menu engineering, large-scale kitchen operations, and the leadership of multicultural teams, all while maintaining strict adherence to Forbes 5-Star and MICHELIN standards. Congratulations on your new role at the Ritz-Carlton, Dorado Beach. What excites you most about stepping into this position at such an iconic property?

Thank you. What excites me most is the opportunity to contribute to a place with such a powerful sense of heritage and natural beauty. Stepping into this role allows me to help shape culinary experiences, while pushing creativity forward. Being part of a team that strives for excellence every day is incredibly inspiring.

How would you describe your culinary philosophy, and how do you plan to bring that vision to life at Dorado Beach?

I focus on simplicity, seasonality, and respect for ingredients. My goal is to let flavours shine through thoughtful techniques and honest cooking.

Puerto Rico has a rich and vibrant food culture. How do local ingredients and traditions influence your approach in the kitchen?

Puerto Rico has a rich food culture and similarities with Spanish cuisine. Local ingredients and traditions guide much of that culture and so does my creativity. The island’s produce, seafood, and flavours bring depth and authenticity to our menus.

AS EXECUTIVE SOUS CHEF, HOW DO YOU FOSTER CREATIVITY, CONSISTENCY, AND TEAMWORK WITHIN THE CULINARY DEPARTMENT?

I encourage open ideas, constant tasting, and strong communication. When the team feels supported and aligned, creativity and consistency naturally follow.

At Dorado Beach, a Ritz-Carlton Reserve, we recently curated two extraordinary culinary and mixology experiences. From the vibrant flavors of Latin American cuisine to the exquisite artistry of cocktails, our collaborations with Fauna and La Factoría showcased the pinnacle of culinary and beverage mastery.

The evening began with a one-night-only collaboration at COA as the visionary minds behind Fauna, Chefs David Castro Hussong and Maribel Aldaco Silva, transformed our dining space into a stage for culinary exploration. Guests were treated to a multi-course tasting menu, each dish carefully curated to tell a story through experimental flavors and locally sourced ingredients. From savory starters to intricate desserts, every course reflected Fauna’s signature approach, creative and thoughtfully connected to the region’s gastronomy.

Rooted in our Taíno heritage, Barlovento is a casual seaside retreat where relaxed dining meets sweeping ocean views. Inspired by the shape of a giant seashell, this intimate open-air destination invites guests to linger—whether enjoying an easygoing lunch, exploring the boutique, or unwinding with cocktails as the sun sets below the horizon. With the ocean stretching endlessly ahead and kite surfers gliding through the trade winds, Barlovento is the perfect place to slow down and savor the moment.

Visionary owners, internationally respected designers, botanical experts and local healers envisioned a spa that pushed the limits of what has typically been done and thought beyond these limitations.

The five-acre site is blessed with mature trees, expanses of space, natural light and the soothing sounds of nature. All of these things have been embraced, respected, and incorporated into every detail of the design and allowed for the creation of something truly magical and transformational.

Bringing local healing practices back into focus and reinforcing our deep connection with the natural world was the inspiration behind Spa Botánico. The experience begins as you enter the Apothecary Portal, filled with local botanicals used in myriad ways for health, beauty and culinary purposes. It is a monument to well-being and draws guests deeply into the experience beyond its doors.

Treatment rooms are 350 square feet, free-standing pavilions, each with its own garden, outdoor showers and soaking tubs. Many treatments take place on tables set within the garden, as guests listen to the breezes undulating through the trees, surrounded by the powerful scent of bay rum leaves, lemongrass and ginger.

Custom works from local artists adorn the walls of each individual space. Two of the twelve treatment rooms are tree houses perched high above the site, reached only by steps winding around the trunk of mature trees that have been keeping watch over this land for decades.

Spa Botánico has taken traditional healing remedies and blended them with modern treatments and technologies. Deviating from the norm while honoring what has always been here: that is the essence of Spa Botánico.

Guests may now experience a curated selection of BABOR-enhanced facials and body therapies designed to restore vitality, improve skin health, and deliver visible, lasting results. POOLS CABANAS

Enjoy beautiful oceanfront views of the Atlantic from the infinity edge Positivo pool and cabanas, located just a few steps from the hotel’s main arrival pavilion. Here, guests can enjoy sunsets over a palm-fringed coast while they rest their feet in the golden sand, or savor al fresco bites and a great selection of hand-crafted specialty cocktails and refreshments from the adjacent Positivo Sand Bar.

For a private retreat on the beach, enjoy a half- or full-day cabana rental with two relaxing options.

For a more lively experience that the whole family will enjoy, the Encanto Beach Club pool offers an expansive pool for adults and splash pools for children, along with delectable poolside cuisine from the open-air Encanto Beach Club Bar and Grill.

The Positivo Sand Bar pool offers four cabanas, each accommodating four guests and offering refreshments and other amenities.

Olivier: What I love most about being part of the Dorado Beach, a Ritz-Carlton Reserve experience, is how deeply connected we are to the natural beauty and history of this place. Every day, I get to share the story of Puerto Rico, its vibrant culture, lush landscapes, and warm-hearted people with guests who often leave feeling transformed.

Kiana: Beyond the opportunity to curate meaningful and unforgettable experiences for each guest, what I cherish most is the journey of personal and professional growth this place has offered me. I began my very first job here at the age of 18 in Food & Beverage, rotating through roles as a Hostess, Server Attendant, Server, and learning bartending techniques at Positivo, Encanto Beach Club, and laterally at COA. I also worked at the former Mi Casa restaurant as a Hostess, then transitioned to Spa Botánico as a Reservationist, while offering lateral support at the Pool & Beach. My passion was always to learn as much as I could from every corner of the Reserve. Being part of this community has shaped who I am today, and I feel deeply proud to contribute to a place that continuously inspires excellence and growth.

Gabriel: I love seeing people truly relax and reconnect with themselves, with their family, with nature. Being a part of that is something special.

Angel: One of the most memorable experiences I’ve had was coordinating a first-time visit to Puerto Rico for a guest referred to us by a fellow Les Clefs d’Or Concierge. It was also my first time collaborating with a colleague from our global network, who reached out to ensure that a dear and valued guest would be exceptionally cared for during their stay. We gladly curated a personalized itinerary that showcased the very best of our island and resort. The guest was so delighted by the experience that they returned not once, but twice more. What made it even more special was the second visit. The guest specifically requested our assistance in planning a custom day trip to St. Croix, accompanied by one of his favorite local guides. We arranged everything down to the smallest detail, and it was incredibly rewarding to see how these thoughtful, tailored touches deepened his connection to the Caribbean and made his return visit all the more meaningful.

Olivier: We were informed by our cherished resident owners that they will be visiting The Ritz-Carlton, Kyoto a destination as refined and serene as it is culturally rich. Inspired by their journey, we saw a meaningful opportunity to extend our heartfelt appreciation. In collaboration with the hotel's gracious concierge team, we arranged a personalized welcome note accompanied by traditional Japanese amenities to greet them upon arrival.

Kiana: One of the most touching experiences I’ve had happened shortly after I began my role as Concierge in January 2025. A family approached me asking for help in celebrating a belated Christmas together, they had been so busy they hadn’t had a chance to gather for the holidays. They requested to reserve the Monopoly table and order food and drinks from Positivo so they could exchange gifts and enjoy time as a family. I saw an opportunity to bring the magic of Christmas back for them. I located a Christmas tree from another department, found stored decorations, asked the team at COA to prepare Coquito the traditional Puerto Rican holiday drink they had never tried, and transformed the library into a festive, cozy holiday scene. I also left a handwritten note with holiday amenities on their table. When the family arrived, they were overcome with emotion tears, laughter, and heartfelt gratitude. They said it felt like Christmas had never left, and they cherished the unexpected Puerto Rican touch. Seeing their joy was one of the most meaningful and fulfilling moments of my career.

Gabriel: I once helped plan a surprise beach proposal with candles and surprise family visit. The bride-to-be cried, the groom cried, and honestly, I teared up too. It was beautiful.

Angel: I believe it’s the rich history of our property that truly sets it apart—it tells a story that inspires a deep sense of connection, well-being, and harmony with nature. What makes it even more special is the loyalty of our guests. Year after year, we have the privilege of watching their families grow, welcoming their friends, and sharing countless meaningful conversations and memories. It creates a sense of community that’s both rare and beautiful.

Olivier: From the moment you arrive, it feels like your own private paradise lush forest, oceanfront pools, and starlit dinners. It’s effortless luxury: intimate, grounded, and truly unforgettable.

ARE THERE ANY HIDDEN GEMS IN PUERTO RICO THAT YOU WOULD RECOMMEND FOR PEOPLE WISHING TO EXPLORE THE HIDDEN BEAUTY OF THE LANDSCAPE?

Angel: Lately, I’ve been drawn to the central region of our island. Its remoteness, natural beauty, and peaceful atmosphere offer the perfect escape. One of my favorite hidden gems is an early morning hike to Cañón Blanco in Utuado—a breathtaking natural wonder that feels both invigorating and grounding. After the hike, make your way to Casa Vieja for a traditional Puerto Rican lunch—think pastel al caldero, guanimes con bacalao, roasted pork, and morcilla. This charming mountainside spot offers incredible views and authentic flavors that capture the heart of our culinary heritage. To end the day on a sweet and peaceful note, stop by FinCafé for what I consider the best coffee on the island, enjoyed in one of the most serene and natural settings. Although it’s a long day on the road, it’s the perfect way to unwind and reflect while taking in the true essence of our landscape and culture.

Olivier: Tucked away from the typical tourist trail, Crash Boat Beach is one of Puerto Rico’s most stunning hidden treasures. Named after the World War II rescue boats once stationed at nearby Ramey Air Force Base, the beach’s historic pier now serves as a popular spot for swimming, snorkeling, fishing, and diving. With golden sands, crystal-clear waters that shift from emerald to deep blue, and lush hillsides as a backdrop, Crash Boat offers a picture-perfect blend of history and natural beauty.

Kiana: Definitely. I always recommend El Yunque Rainforest Puerto Rico’s lush, tropical treasure. It’s one of the most unique ecosystems in the world and offers unforgettable hikes, waterfalls, and scenic views. I also love encouraging guests to stroll through Old San Juan. The colorful cobblestone streets, colonial architecture, rich history, and vibrant local flavor offer a true glimpse into the soul of Puerto Rico either day or night.

Gabriel: Charco Azul, the salt flats in Cabo Rojo, and the food trucks in Piñones, totally worth it.

One place guests especially fall in love with is Spa Botánico. Roughly 10 miles of caverns have been mapped here — a fraction of the caves’ full scope — and the publicly accessible portion includes intricate stalagmite and stalactite formations, ancient petroglyphs and the enormous 200-foot-tall chamber known as Cueva Clara.

Open to guided tours, these caves are not only geologically unique but also support distinct ecosystems. 13 bat species are among the diverse flora and fauna that can be observed in Río Camuy Cave Park.

COASTAL EXCURSIONS AT OJO DEL BUEY

Located at the mouth of the La Plata River in the small coastal town of Dorado, Ojo del Buey Park is a beautiful place to explore the coast, approximately 35 minutes west of San Juan and 15 minutes from Dorado Beach. Adventure seekers, nature lovers and history enthusiasts will find a lot to enjoy here, as will those who simply wish to relax on the beach.

The park’s most famous landmark is El Ojo del Buey, a natural rock formation that resembles an ox’s eye overlooking the ocean. The trail to the rocky outcropping offers gorgeous coastal scenery, lush vegetation and abundant wildlife. Numerous archaeological finds have also been discovered in the area and are on display at the nearby Museo de Arte e Historia de Dorado.

The stretch of coastline around El Ojo del Buey is popular for surfing as well. The park offers a sheltered swimming beach, snorkeling and diving access, picnic areas and recreational fishing.

ECO ADVENTURES AT RÍO TANAMA

The same karst topography that created the underground labyrinths of Río Camuy Cave has also made Río Tanama the setting for some of Puerto Rico’s most exciting adventures. A 90-minute drive from San Juan, the Tanama River cuts a path through densely wooded canyons and ravines, even flowing through several underground sections.

Rafting the river is one of the most thrilling adventure day trips from San Juan. Several tour operators offer guided rafting trips on the Tanama River, including whitewater and underwater cave tubing.
