CÉSAR ENCISO

Hailing from Guanajuato, Chef César Enciso assumed the role of Executive Chef at Rosewood San Miguel de Allende in the summer of 2022. With more than a decade of experience, César has shaped his culinary path within some of Mexico’s most distinguished hotels.

As Executive Chef, he leads the culinary vision across Restaurant 1826, Tequila Bar 1826, Luna Rooftop, Pirules Garden Kitchen and Agua, crafting experiences rooted in Mexican tradition and guided by a deep respect for place. His approach reflects an authentic expression of Mexican gastronomy, one that honors the culture, flavors, and heritage of the destination.

César’s journey began early, learning the foundations of Mexican cooking from his father and grandmother. After studying gastronomy at the Technological University of San Miguel de Allende, his career took him across the country, from Mundo Imperial Acapulco to Aak-Bal All Suites Resort in Campeche, and later to Le Blanc Spa Resort in Los Cabos, where he oversaw the culinary direction of multiple dining venues.

After exploring Mexico’s diverse regional cuisines, César returned to San Miguel de Allende to embrace his role at Rosewood. Today, as a passionate ambassador of Mexican gastronomy, he weaves stories of regional history into his cooking, celebrating both ancestral traditions and contemporary expression. When Chicago native Stirling Dickinson arrived in San Miguel de Allende, his poetic words show that it didn’t take long for him to make up his mind. The town would be his new home.

A couple of years earlier, Dickinson and a friend had rumbled across 18 states of Mexico in a green 1929 Model A Ford convertible named Daisy. Another book followed, and when they came to San Miguel in 1937 to write their third book, which was to be about the Mexican Revolution, Dickinson was hooked. He decided to stay and became the first American to take up residence in the town. Today —more than 20 years after his death—he is still a household name in San Miguel.
